I am about to do this for the third year in a row. The peaches are soooo fresh tasting. I get them from an orchard, so they are extra good. If it were me, I'd definitely try to salvage them somehow... perhaps you could blend them together with the water, simmer to cook out a lot of the liquid and make some fruit rolls. Or you could add them to a fruit salad with other fruits that add more flavor? Even 5 jars is a lot of peaches! I would not take the ski...I think that would work. I would not take the skins off of the plums. Just cut them in half and take out the pits, press them into your jars, cut side down, and see if you can get enough juice to flow to cover the plums. If it doesn't work, perhaps you could add some fruit juice, to fill in the gaps. Depending on where you live, (we are in Indiana), you might be able to get some nice fresh local apples to juice for this. PLEASE come back and let me know what you did and how it turned out. After draining, I packed them cold<br />into cold, clean jars. The lids were sitting in the hot canner waiting to use.<br />I wiped the jars well before putting on the lids and popping into the canner.<br />Once boiling, I set the timer for 25 minutes. They've been sitting on the counter<br />cooling for half an hour. Sorry for getting into such detail, but I wanted to<br />let you know that I found this to be so simple! So far the jars look incredible!<br />The jars are jammed full with only about 1/4 to 1/2" of liquid on the bottom...<br />in other words.. not floating in a bunch of liquid. I hope they'll store well,<br />and taste as good as they look! Thank you for such a simple method and great <br />step-by-step instructions. I now have the peels and pits with the lemon water<br />I dipped them in on the stove. I brought it to a boil and will now leave it as<br />is overnight. Tomorrow I'll strain it and make jelly.
