We grow it, sell lots ...We definitely eat rhubarb. We grow it, sell lots at our family farm stand, can strawberry-rhubarb jam, and I freeze it in slices in quart bags. I usually freeze about 15 quarts to cover the 9 months when there is no growing rhubarb. I use one quart for a pie or a crisp and 1 quart makes a batch of muffins and sauce. I have never made sauce up and canned it, just always cook it fresh (or from frozen) as wanted.
