The day before, put Great Northern beans in a colander and rinse them off, discarding any rocks or broken beans. Cover them well with plenty of cold water, add a little lemon juice and soak until the next day. Drain and rinse. In the meantime, chop up a small amount of bacon and an onion and cook that together in your cast iron pot until the bacon is done, but it doesn't need to be crisp. Add the beans and enough water to cover by 2 inches. Bring to a boil, and reduce to simmer. Cover, and cook until the beans are very tender. Add salt and pepper to taste. You might have to add some boiling water as it cooks if your water gets too low.
