I seem to remember being told that all food allergies are connected to proteins, but I don't know if that is true. By the way, the reason duck eggs are higher in some good nutrients is simply because the yolk to white ratio is higher. It has happens when I used duck eggs for my bagel sandwich, a mexican breakfast wrap, and an egg bake. All three times I got really sick and had to sleep for the afternoon. My friends little girls, one can't eat chicken eggs but can have goose eggs and one can only have quail eggs. <br /><br />I am really bummed about the duck eggs because they are higher in B12, good fat, and I think they taste better. I am thinking it has something to do with the protein structure. I had been wanting to get some duck ...Hola Yolanda,<br />I had been wanting to get some duck eggs for some time. I wish they were available somewhere near buy. We do get our eggs, milk, produce and meat from the an amish family in PA. <br /><br />Growing up my aunt had ducks and she will always share the ducks eggs with us. Love the flavors but never heard of allergies.<br /><br />I do wish you lived close by to visit you and enjoy all the bounty you have. I would not have known their was any difference in eggs.
