I do like to make slow pizza, but when I want to do it at the last minute, here is how ~
PIZZA IN A HURRY
1 cup very warm water
2 1/2 teaspoons dry yeast
1/2 teaspoon salt
2 Tablespoon olive oil
unbleached white flour
pizza sauce
toppings of your choice
grated mozzarella cheese
Preheat oven to 400 degrees F.
In a medium mixing bowl, put in the yeast, add the water and stir to dissolved. Add the salt and oil and then gradually add the flour until it is like bread dough ~ a nice, soft, kneadable dough.
Knead on floured surface for 2 minutes. Let rest for 10 minutes then roll it out, using plenty of flour so it won't stick. Spray or grease the pan and put the dough on it. I like to use the big "half sheet" pan for this, but you could also use 2 round pizza pans or anything you prefer.
Here is my pizza sauce. Spread it on your crust. As much or little as you like.
Here it is with the sauce.
I put on several nice big slices of nitrate-free pepperoni.
Here it is in the oven, having been topped with plenty of mozzarella cheese.
I baked it for about 12 minutes. You need to watch it to make sure it doesn't cook too much, but you don't want it to be raw either.
Here are the cutting tools I use when it's in a pan with an edge like this. The pizza wheel won't go all the way to the edge, so I finish the slicing off with my kitchen shears.
