Crackers
Crackers are very easy to make and I'm sure you can find many recipes for lots of different kinds. Here is what I do:
I have a very nice sourdough starter that I got HERE for free! It is best to feed it at least once a week, but since there are only 2 of us, I am not always in need of a sourdough product, and that is when I like to make a quick batch of crackers.
Sourdough Crackers
1/2 cup starter
1 cup warm water
1 teaspoon salt
1 cup whole rye flour
unbleached white flour
In a mixing bowl, combine the first four ingredients, and stir it all together well. Then start adding the unbleached white flour, a handful at a time, stirring until it starts to clean the sides of the bowl. Cover with plastic wrap and let it sit on the counter for 7 hours.
Pre-heat oven to 375 degrees F. Next, turn it out onto a well-floured surface and work in enough flour that you could knead it if you wanted to, but don't knead it. Divide it into 4 pieces.
One at a time, using plenty of unbleached white flour, roll the pieces out thinly and place them, one at a time on a large buttered baking sheet.
Poke it all over with a fork, so it won't poof up when you bake it. Sprinkle well with kosher salt. Using a pizza cutter, score into the size crackers you want.
Bake for 10 minutes. Cool. Store in air-tight container.
I really enjoy these spread with THIS. Delicious!
I am SO gonna try this! I have a batch of sourdough getting started right now, and it will be ready in a couple more days. I do a homemade cracker that we love, but am always game for something new. Right before baking I brush mine with a bit of water and sprinkle on a combination of chopped rosemary, garlic powder, black pepper and salt. YUM!
